Storage Basics for 205L Drums
- Properly stored sealed maple syrup drums have a shelf life of 7+ years. The key factors are keeping drums sealed, stored in a cool and dry environment, and protected from direct sunlight.
- No refrigeration is required for sealed drums. Maple syrup's high sugar content (66–68.9% Brix) acts as a natural preservative.
Optimal Storage Conditions
- Temperature: Cool, stable environment (ideally 10–20°C / 50–68°F)
- Humidity: Low to moderate — avoid condensation on drum surfaces
- Light: Protected from direct sunlight, which can affect color over time
- Ventilation: Adequate air circulation to prevent moisture buildup
- Surface: Drums stored on pallets, not directly on concrete floors
Important Notes on Grade Stability
- Maple syrup can naturally darken during extended storage. This is a normal process that does not affect safety or purity, but it can shift the grade classification.
- For buyers who require a specific grade, consider lot dates and plan inventory turnover accordingly. Inspection results are valid for approximately four months.
Grade may shift over extended storage. Confirm lot date and grade at time of purchase — and plan usage accordingly.
After Opening a Drum
- Transfer unused syrup to clean, food-grade containers
- Refrigerate opened/partially used containers
- Use within a reasonable timeframe once opened
- Monitor for any signs of fermentation or mold (rare in properly handled product)
- Keep detailed lot tracking records for traceability
Receiving and Handling
- When receiving 205L drums, inspect for any damage during transit — dents, leaks, or compromised seals. Document any issues immediately for claims.
- Drums are palletized for handling with standard warehouse equipment. Tempering to 40–50°C before use reduces viscosity for easier pumping and dispensing.
Inventory Management Tips
- Use FIFO (First In, First Out) rotation to maintain grade consistency
- Maintain lot-level tracking for traceability and recall preparedness
- Order in quantities aligned with your production schedule to minimize storage time
- Consider the MOQ (12 drums) and container loads (78 drums / 20ft) when planning orders
