Grade A Classification

All retail and food-service maple syrup in Canada is classified as "Grade A" with four color classes based on light transmission. Darker grades are not lower quality — they simply have more intense flavor.

Light transmission is measured at 560nm wavelength. Higher transmission means lighter color and more delicate flavor.

Processing Grade

Processing Grade maple syrup is 100% pure maple syrup that doesn't meet the flavor or appearance standards for Grade A. It's sold only in bulk for food manufacturing — not for retail.

Processing Grade offers excellent value for manufacturers who need maple flavor in formulations where appearance is not a factor.
