Organic vs. Conventional: What's Different?
- Both organic and conventional Canadian maple syrup are 100% pure maple sap, concentrated to 66–68.9% Brix. The difference lies in production practices, not the fundamental product.
- Organic certification covers forest management, tapping practices, evaporator operations, and processing aids. Conventional production follows all federal quality standards but without the additional organic protocols.
What Organic Certification Requires
- Forest management plan meeting Canadian Organic Standards (COS)
- Restricted use of chemicals in the sugarbush
- Approved cleaning products and processing aids only
- No synthetic defoaming agents during evaporation
- Detailed record-keeping of all inputs and processes
- Annual inspection and certification by an accredited body (e.g., Ecocert, Québec Vrai, TCO Cert)
Procurement Considerations
- Organic maple syrup carries a price premium due to certification costs and additional production requirements. Buyers should consider whether organic certification is required for their end product or market.
- Not all producers are organically certified, so organic supply represents a smaller portion of total production. Planning ahead and specifying organic requirements early in the procurement process improves availability.

- Your finished product carries an organic label or claim

- Maple syrup is used as a minor ingredient (not featured on label)
- Cost optimization is the primary consideration
- Your market does not require organic certification
