Why maple works in beverages

Grade selection for beverages
- Golden: the cleanest, most delicate profile — premium RTDs and sparkling waters where colour must stay light.
- Amber: the beverage default — distinct maple character in coffee, tea, and craft soda without heaviness.
- Dark: for maple-forward positioning and alcoholic applications (maple old fashioned syrups, cream liqueur bases).
Formulation starting points
- Typical dosing 4–10% by weight for a clear maple note in RTD coffee/tea; craft sodas run 6–12% depending on target °Brix.
- Maple contributes fermentable sugars — for brewed or fermented applications, account for full attenuation of its sucrose/invert fraction.
- Fine sediment-free syrup is standard (clarity is verified at grading), but filter-polish before bright bottling if your spec demands it.
- Acid-stable across normal beverage pH; validate colour in light-coloured products (maple contributes amber hues proportional to grade).
