Maple Pecan Granola Bars

Maple Pecan Granola Bars are a delicious and nutritious snack, perfect for breakfast on the go or a midday energy boost. This recipe combines the natural sweetness of maple syrup with the crunch of pecans for a tasty treat.

Ingredients:

  • 2 cups rolled oats
  • 1 cup chopped pecans
  • 1/2 cup shredded coconut (optional)
  • 1/4 cup sunflower seeds
  • 1/4 cup pumpkin seeds
  • 1/2 cup dried cranberries or raisins
  • 1/2 cup pure maple syrup
  • 1/4 cup almond butter or peanut butter
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1/2 tsp salt

Instructions:

  1. Preheat Oven:

    • Preheat your oven to 350°F (175°C). Line a 9x9-inch baking dish with parchment paper.
  2. Mix Dry Ingredients:

    • In a large bowl, combine the rolled oats, chopped pecans, shredded coconut, sunflower seeds, pumpkin seeds, and dried cranberries or raisins.
  3. Prepare Wet Ingredients:

    • In a small saucepan over low heat, combine the maple syrup, almond butter, melted coconut oil, vanilla extract, and salt. Stir until smooth and well combined.
  4. Combine and Mix:

    • Pour the wet ingredients over the dry ingredients and mix thoroughly until everything is well coated.
